High Protein Cottage Cheese Bark

Naturally sweetened high protein cottage cheese bark, where ice cream meets healthy. Ready in 5 minutes, freezer-friendly, and lots of topping options

- 2 cups cottage cheese - full fat if using non-fat or 2% add 1/4 tsp of xanthan gum (arrowroot powder or corn starch)
- 3 tbsp almond flour
- 2 tbsp almond butter
- 1 tsp vanilla extract
- 2 pinches salt
- 2 tbsp protein powder optional
Toppings be creative and have fun, also not necessary.
- 2 tbsp melted dark chocolate chips
- 1 tbsp chopped pecans or nuts/ seeds
- 1 tbsp mixed berries or dried berries & cherries optional
- 2 tbsp granola optional
Blend cottage cheese, almond flour, honey or maple syrup, and vanilla until smooth, 1-2 minutes.
Fold in almond butter, salt, and protein powder (if using).
Spread evenly onto a parchment-lined baking sheet or bread pan, ¼-1 inch thick.
Scatter toppings over the top, pressing gently so they stick.
Freeze until firm.
Slice or break into pieces. Store in the freezer in an airtight container.
- Use full-fat cottage cheese for the best texture; if using non-fat or a watery full-fat, add ¼ tsp xanthan gum (or arrowroot flour/cornstarch).
- Roughly 7-9g protein per serving without protein powder; 9-11g with 2 Tbsp protein powder or homemade seed powder added.
- One serving is about ⅓ cup (2-3 oz) — roughly a 1-inch wide slice from a bread pan, or couple pieces of bark-style piece from a baking sheet.
- For a more plant-forward version, top with fruit, seeds, and dark chocolate.
