High Protein Cottage Cheese Bark

Naturally sweetened high protein cottage cheese bark: where ice cream meets healthy. Ready in 5 minutes, freezer-friendly, and lots of topping options.

I made this because was interested in how good could cottage cheese bark actually be, its amazing and I have made it since cause its so satisfying. It’s somewhere between a bark and a square, where ice cream meets healthy. This has quickly become my new favorite frozen treat, mostly because it’s built on cottage cheese, and you can stir in protein powder to push the protein even higher if you want to.

If you’re working with a regular blender, blend the cottage cheese first then fold in the rest, this mixture is thick enough that dumping everything in at once isn’t kind to your blender. I skipped my homemade protein seed mix the day I brought this to a friend’s BBQ, but it’s a regular add-in when I’m making it just for myself.

It’s sugar-free, takes about 5 minutes of actual work — you’ll spend longer digging ingredients out of the cupboard than making it. Use full-fat cottage cheese so it stays thick and less icy; if you’re using non-fat (or your full-fat happens to be watery), stir in ¼ teaspoon of xanthan gum, or arrowroot flour or cornstarch if that’s what you have on hand. Then have fun with toppings — melted chocolate, nuts, sea salt, granola, chocolate chips, M&Ms, shredded coconut, dried or regular berries, granola, whatever sounds good.

Everyone at the party was skeptical the second I said the name out loud — cottage cheese bark doesn’t exactly sell itself. But one bite in, they were asking for the recipe. So here it is.

Ingredient Notes

Use full-fat or 2% cottage cheese for the best texture, non-fat tends to freeze icy rather than just solid. If that’s all you have, or your full-fat cottage cheese runs watery, stir in ¼ teaspoon xanthan gum (arrowroot flour or cornstarch work as substitutes) to thicken it up. The almond flour is what keeps this from freezing into a rock-hard block, giving it more of a soft, scoopable bite instead.

Nutrient Spotlight

Cottage cheese – a strong source of protein, plus calcium and B12. Some brands are probiotics, others are pasteurized – look for this on package.

Almond flour – provides fiber, protein, and healthy fats.

Almond butter – adds healthy monounsaturated fats and a bit of vitamin E.

Honey or maple syrup – natural sweeteners that bring trace minerals along with their sweetness.

Protein powder (optional) – a straightforward way to add extra protein without changing the texture much.

Step-by-Step Instructions (with Full Recipe below)

  1. Blend 2 cups cottage cheese til completely smooth and creamy, 1-2 minutes.
  2. Fold in 2 tablespoons almond butter, 3 tablespoons almond flour, 2 tablespoons honey or maple syrup, and 1 teaspoon vanilla extract, 2 pinches of salt, and 2 tablespoons protein powder (if using) by hand.
  3. Line a baking sheet with parchment paper. Pour the mixture on and spread evenly into a rectangle, about ¼-1/3 inch thick. (A parchment-lined bread pan also works well and gives a thicker result of 1 inch – this is what I show here)
  4. Scatter your toppings evenly over the top: chopped mixed berries, melted dark chocolate chips, chopped nuts or seeds, granola, and a pinch of sea salt, pressing gently so they stick. Freeze until firm. Slice if made in a bread pan, or break into pieces if made as bark. Store in the freezer in an airtight container, it should be soft enough to eat straight from the freezer or it may need a few minutes before eating.

FAQ

Q. Can I freeze this ahead of time?
A. Yes: that’s exactly how it’s meant to be stored. Keep it in an airtight container in the freezer.

Q. Can I make this without a food processor?
A. Yes, a regular blender works, just blend the cottage cheese base first, then fold in the rest rather than blending everything together at once. It is too thick to blend all ingredients together.

Q. What if my cottage cheese is watery or non-fat cottage cheese?
A. Add ¼ teaspoon xanthan gum, arrowroot flour, or cornstarch to thicken it before freezing.

A Holistic Nutrition Tip

Protein-rich snacks are great for the body to support muscle maintenance in the pre- and post-menopause years, or simply meeting higher protein needs for active bodies. Having something naturally sweetened and satisfying in the freezer means reaching for real food instead of a packaged treat when that craving hits.
