After I did holistic nutrition 10 years ago, I stopped eating iceberg lettuce cause it is not as nutritional dense. But I missed the crisp and crunchy texture! So 10 years after holistic nutrition class now and I realize it is ok to get iceberg lettuce for the crisp and crunch, oh and its fiber content – and I add great nutrient dense foods to my meal to make up for it throughout that day
So enjoy the iceberg lettuce, understanding that you need to add peppers, tomatoes and cucumbers, you can also add almonds or other nuts to add more dense nutrients. The good thing is iceberg lettuce isn’t bad for you, it just isn’t as nutrient dense as spinach, kale, romaine, or leaf lettuce.

How to make this Salmon Wedge Salad with Blue Cheese Dressing fool proof?
- Buy good Blue Cheese! It’s the core of the salad dressing and good plain yogurt
- Smoked Salmon – buy wild caught not farmed. Wild caught salmon has higher Omega 3s to Omega 6s which is anti-inflammatory and healthier. Farmed fished have more contaminants like PCBs (man made chemical – polychlorinated biphenyls, in fish fed that is stored in fat and doesn’t break down) and pesticides.
- Like all meats and fish – I highly suggest to eat better quality and less quantity. One of the reasons I don’t like eating out.

Salmon Wedge Salad
Ingredients
- 1 iceberg lettuce cut into 4 or 5 wedges
- 1 yellow pepper sliced
- 1 english cucumber chopped
- 2 cups cherry tomatoes halved
- 1/2 red onion thinly sliced
Optional
- 2 packages smoked salmond 4 oz or 113 gram package –> total 8 oz or 230 grams of smoked salmon
Or vegetarian
- 1 can drained and rinsed chickpeas
Instructions
- Slice one yellow pepper, shop cucumber, halve cherry tomatoes, and slice red onions.
- Take the two outer leaves off the iceberg. Then cut into 4 to 5 wedges.
- Put the wedges onto 4 to 5 plates. Then add the sliced veggies
- Add Smoked salmon or chickpeas.
- Add Homemade or store bought blue cheese dressing.
