Pan-Seared Lion’s Mane & Black Pearl King Oyster with Za’atar

Simple pan-seared Lion’s Mane and Black Pearl King oyster mushrooms with za’atar, oil, and butter — dry-seared in a cast iron skillet for a meaty, savory bite.

I picked up a beautiful mushroom variety pack from Mushroom Mesa recently, and Lion’s Mane was the star of the haul, alongside a Black Pearl King oyster mushroom that took just as well to the same technique. Lion’s Mane has this shaggy, almost coral-like look before you cook it, and a genuinely meaty texture once seared. The Black Pearl King — a cross between blue oyster and king trumpet, with its white stem and dark, very firm cap — brought an even denser, heartier bite alongside it. I paired both with a simple pork chop for dinner, and honestly they could have been the main event on their own.
The technique is simple: dry-sear first to draw out moisture, then finish with herbs, oil, and butter under a lid so everything soaks in.

Ingredient Notes
Lion’s Mane mushroom — a good source of B vitamins and antioxidants, with a meaty texture. Popular in traditional wellness circles for cognitive support, though more research is still needed to confirm those effects.
Black Pearl King oyster mushroom — a cross between blue oyster and king trumpet, prized for its dense, firm texture. Provides B vitamins, potassium, and antioxidant compounds similar to other oyster varieties.
Za’atar — a Middle Eastern herb blend (typically thyme, sumac, and sesame), which brings its own antioxidant boost along with flavor.
Olive oil — a source of heart-healthy monounsaturated fats.
Butter — adds richness and helps the herbs cling to the mushroom as it cooks.

FAQ
Q. Why dry-sear before adding fat?
A. Searing dry first helps draw out moisture, giving the mushroom a firmer, meatier texture once the butter and oil go in.
Q. What makes a Black Pearl King different from a regular oyster mushroom?
A. It’s a cross between blue oyster and king trumpet mushrooms — you can identify it by its white stem, dark cap, and notably firm, dense texture compared to more delicate oyster varieties.
Q. Can I use a different herb blend?
A. Yes — za’atar is just what I had on hand. Any dried herb mix you enjoy will work.
Q. Does this method work for other mushrooms?
A. Yes, this dry-sear-then-butter approach works well for other large, firm mushroom varieties too.
Q. How do I store leftovers?
A. Before cooking, store in a paper bag, with extra paper towels if any moisture. After cooking mushrooms – refrigerate in an airtight container and reheat in a skillet for the best texture — a microwave works in a pinch.
A Holistic Nutrition Tip
Pressing these mushrooms firmly against the hot pan does more than look satisfying — it maximizes surface contact, which helps develop that deep golden sear without needing extra oil or butter to get there. Less fat, more flavor, and a texture that holds its own next to any protein on the plate.
Little sourcing choices like these add up across a week of meals more than any single “superfood” ever could. Whole foods, natural ingredients.
About Mushroom Mesa
All of these mushrooms came from Mushroom Mesa, a small farm in Crawford, Colorado. It’s run by Mike, a self-taught mushroom farmer who built the whole operation himself after moving to Colorado from St. Louis. He grows an impressive range — Lion’s Mane, oyster, chestnut, reishi, and more — and sells at farmers markets around western Colorado, including Crested Butte. It’s the kind of small, hands-on operation that’s worth supporting if you’re nearby.

RECIPE

Pan-Seared Lion’s Mane & Black Pearl King Oyster with Za’atar
Ingredients
- 1 large Lion's Mane mushroom, sliced into thick slabs
- 1 large Black Pearl King oyster mushroom, sliced into thick slabs
- 1 tbsp za'atar
- 1 tbsp olive oil
- 1 tbsp butter
Instructions
- Slice the Lion's Mane into ½-inch (about 1.25 cm) slabs, and the Black Pearl King into slightly thicker ¾-inch (about 2 cm) slabs, since its dense texture holds up well at that thickness.
- Heat a cast iron skillet over medium heat, no oil.
- Place the mushroom slices in the dry skillet. Set a smaller cast iron pan or lid directly on top of the mushrooms and press down firmly — this keeps the dense slices in full contact with the hot surface for an even sear.
- Dry-sear 3-4 minutes per side, covered.
- Sprinkle za'atar over the mushrooms.
- Drizzle with olive oil and add a pat of butter to each piece.
- Press again with the smaller pan or lid and cook 1-2 more minutes per side, letting the butter and herbs soak in.
- Serve warm alongside your favorite protein, or on its own.
