During the pandemic – Lively Life pivoted and started Cook it, Lively! – our cooking zoom class. This was a great way to see family and friends. My husband and I had our amazing Aunt Leslie and my hilarious brother Ken going through cancer treatments. I will always remember my cooking classes as a chance to see them and my other supporters through this difficult time. Thank you to anyone who attended – love and hugs!
Garlicky Greens was included in the first cooking class. Each class starred a certain food – and this one was garlic! Here’s the interesting details we shared at that class.
Why incorporate Garlic?
Garlic has been used medically for over 3500 years, and is known as a “cure-all”. Garlic has multiple medicinal properties, top three include
- Helps improve your immune system and fight infection – think bacteria, virus, yeasts and fungi
- Improves circulation by decreasing blood cholesterol, preventing clots, and lowering blood sugar
- Supports Detoxification by helping oxidation & reducing free-radical damage
Did you know that garlic can be both bitter and sweet and the taste determines the amount of medicinal properties it contains.
- Chopping garlic makes it taste bitter
- Whole garlic roasted will taste sweet
- Raw garlic is the most medicinal and the most bitter. SO why cook it – because cooking mellows the bitter taste and tastes amazing.
I chop my garlic to release its medicinal healing properties from a compound called Allicin. So the more bitter the taste, the more allicin.
HEAT stops the release of Allicin so after you cut the garlic let it sit for a few minutes before cooking. To make the garlic medicinal effects work
Here’s a Tip – when frying – add garlic at the end and reduce the temperature cause those garlic little parts taste bitter when burned

Did you know there is an easy way to get rid of garlic breath?
Fresh herbs especially parsley can help cover the garlic breath smell. Hence why we are finishing our dish with parsley. [others apples, lettuce, fennel, mint leaves]
Take Aways : include wash off the smell use a silver spoon or faucet with soap.

How to make Garlicky Greens foolproof?
- If using spinach or other lighter greens, cook for less time and keep an eye on them with the oven light on.
- For Dinosaur kale – destem them for better taste. Or leave as a complete kale leaf so people know to cut around the stem.
- Massage all ingredients into the Kale/Spinach with the olive oil. Kale give extra massage to break it down.

RECIPE

Garlicky Greens
Ingredients
- 4 cups Kale (preferred) or Spinach or other greens
- 5 cloves garlic minced
- 1 inch ginger root minced – or 1 tsp ginger powder
- 1 tbsp coconut aminos or soy or tamari or brag's liquid aminos
- 1 tbsp avocado oil
- 1 tsp Red Pepper flakes optional
Instructions
- Preheat oven at 350oF (177oC)
- Rinse and destem the Kale and cut/rip into ~2 inch squares. No prep needed for Spinach.
- Smash Garlic
- Spoon the skin off the ginger, grate ginger.
- Massage all ingredients into the Kale/Spinach with the olive oil. Kale give extra massage to break it down. Add Red Pepper flakes (optional).
- Put in oven at 350oF for 7 min, check, if you want crispier put back in oven watching closely.
