White Chocolate (without Cacao Butter)

Gluten-free, dairyfree white chocolate without cocoa butter – this simple and fast candy can be placed in a mold then enjoyed. This is so versatile – you can use it as a thick icing, or for fun pretzel or cookie or cupcake topping. I use it for special occasions including Halloween, Thanksgiving, Christmas or New Years, Valentines or birthdays! Let me show you!
I share this white chocolate recipe without cocoa butter since most people do not have that in their kitchen. This recipe uses simple coconut oil or ghee, coconut milk powder for vegan (or use milk powder) and a small amount of organic icing sugar.

How to store White Chocolate (without Cacao Butter)
Store in freezer in an airtight container for upto 3 months. Best stored shorter to reduce freezer burn. Can store for 2-3 weeks in an air tight container in fridge or 5 days in a cool, dark location. For Solid state of white chocolate, it’s best to keep it cool before sharing with friends and family.

How to make this White Chocolate (without Cacao Butter) fool proof?
1. Melt coconut oil or ghee, add salt immediately to dissolve it. Then add coconut milk powder, and icing sugar to taste.
2. Whisk and pour into molds. Or use to create fun special occasion desserts. More to come of these.

RECIPE

White Chocolate without cocoa butter
Ingredients
- 1/2 cup coconut milk powder 50 grams
- 1/4 cup coconut oil 48 grams
- 2 tbsp icing sugar 18 grams
- 2 pinches sea salt or himalayan salt
Instructions
- Melt coconut oil or ghee in glass or ceramic container – 20 sec in microwave or double boiler method.
- Add salt to dissolve
- Add 1/2 of coconut milk powder and stir, and second half and stir (I used a flat whisk.
- Add 1 tbsp icing sugar whisk – taste. Do you want it more sweet – if so add second tbsp of icing sugar.
- If you want vanilla taste – add 1/2 to 1 tsp of vanilla extract. Whisk.
- Pour or soon into mold. Or use as a dip on strawberries, other berries or fruit, or pretzels. If it is too runny, add 1-3 tbsp, one tbsp at a time of coconut milk powder. Redip – and assess.
- Leave in fridge for 20-30 min.
- Keep in air tight container in cold dark place, best in fridge.
- Eat within 2-3 weeks or frozen for 3 months.
