Frozen bananas + chopped pecans = vegan, gluten-free and dairy-free!







Perfect for Summer time – this Banana Pecan Ice Cream is sooooo easy. You probably already have the ingredients in your freezer. Frozen bananas! Putting bananas that are going bad into the freezer for future banana bread or……. Banana Pecan Ice Cream!
These go great with cookies – including the Almond Coconut Chocolate Cookie (using almond meal or flour) or Almond/Peanut Butter cookie (using almond flour so less nut butter).
Why incorporate it?
This is the easiest summer recipe – and in the summer that is exactly what most of us want in the summer. Summer if full of get togethers, endless fun activities, and nature to keep us feeling centered. Here’s one recipe to add to your menu.
Banana’s have lots of potassium, and fiber, good source of Vitamin C, and magnesium.
Banana’s have a medium glycemic load, load takes into account the amount in 100 grams and takes into account the fiber in the food that will slow down the rising of the blood glucose levels. It has a high glycemic index – meaning it causes blood glucose levels to rise. At Lively Life, I suggest you look at glycemic load instead of index, since it takes into account the fiber, amount of carbohydrates and the amount of food.

How to store Banana Pecan Ice Cream
Store in freezer in an airtight container for upto 3 months. Best stored shorter to reduce freezer burn. Take it out and let it unharden for about 10-20 min before serving. It gets quite hard in the freezer.

How to make this Banana Pecan Ice Cream fool proof?
- Run warm tap water over banana from the freezer. To help you pull the skin off, use a butter knife to gently clean off any skin left on frozen banana.
- Cut out any large brown spots in banana.
- Blend frozen bananas if you have a Vitamix or Blendtec, or other powerful blender. If your blender is not powerful, let bananas become soft then blend with alternative milk and salt. Then add pecans and freeze.

RECIPE

Banana Pecan Ice Cream
Ingredients
- 6 frozen bananas
- 1/2 cup alternative milk
- 2 pinches sea salt or himalayan salt
BLEND. Add 1 tbsp more milk if needed. Also stir with wooden spoon or spatula then blend again.
- 1/3 cup pecans CHOP
Stir in.
Instructions
- If eating soon – First take frozen bananas out of fridge. Run warm to hot tap water over frozen banana to enable you to peel it. Use a butter knife to clean off any skin parts left on banana. Cut off large brown spots. Do this quickly for each banana, the banana should still be frozen.
- NOTE : Blend frozen bananas if you have a Vitamix or Blendtec, or other powerful blender. If your blender is not powerful, let bananas become soft then blend with alternative milk and salt. Then add pecans and freeze.
- Blend frozen bananas, alternative milk and salt.
- Stir in chopped pecans, or pecan pieces.
- Freeze in an air tight container.
