I love ice cream and sorbet — hazelnut gelato in Europe might be my all-time favorite. I love raspberries too, so I set out to combine my favorite berry with coconut cream and see what happened. What I landed on is somehow better than either: blended fresh, it’s a perfect soft serve; after about 2 hours in the freezer, it firms up into something closer to real ice cream (leave it much longer and it gets quite hard, so plan to pull it out ahead of time if that happens).

Equipment

  • 1 Suggested Blenders:
  • 1 Blendtec
  • 1 Vitamix

Ingredients
  

  • 1 1/2 cups raspberries
  • 2 frozen bananas
  • 2/3 cup coconut cream = 160 ml or 5.4 oz can
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 2 pinches salt

Instructions
 

  • Blend: Add 1 1/2 cups of frozen raspberries and 2 frozen bananas, 2/3 cup coconut cream, 1 tablespoon honey, 1 tablespoon fresh lemon juice, 1/2 teaspoon cinnamon, and 2 pinches sea salt to a food processor or high-speed blender.
  • Process until smooth: Blend, stopping to scrape down the sides, until thick and creamy like soft-serve. I stop it about 3 times and scrape the sides.
  • Serve or freeze: Enjoy immediately as soft-serve, or transfer to a container and freeze for 90 minutes for a firmer, scoopable texture.
