No-bake high protein pumpkin energy balls, a healthy Halloween or harvest-season treat, ready in minutes with no oven required.

I love pumpkin pie, pumpkin lattes — really, anything pumpkin — so with pumpkin harvest in full swing and Halloween right around the corner, I wanted to share a healthy option to actually look forward to eating this time of year. High protein comes from a mix of ground seeds or protein powder and almond butter, so these genuinely hold you over without a sugar spike and crash.

I made a batch yesterday and had a little fun with them — a few balls got two candy eyes, a few got just one (my accidental cyclops batch), and I left some completely plain. Kids will probably fight over the two-eyed ones.

It’s harvest time with pumpkin pie pumpkins being picked, though I couldn’t find any so I used a can of pumpkin puree. I love pumpkin puree – in lattes and pies, so I thought it would be fun to create a energy ball with extra protein powder to satisfy my hunger this fall and for a non-sweet healthy alternative for Halloween season. All real ingredients, whole foods, and homemade protein powder or store bought protein powder if you want higher protein!

For the protein powder, use either ¾ cup homemade ground seed powder or ½ cup store-bought vanilla protein powder — not both. If you’re serving kids, or just want a sweeter batch, add an extra tablespoon of honey or maple syrup along with 2 extra tablespoons of rolled oats to keep the dough from getting too sticky to roll.

  1. In a bowl, combine 1 cup rolled oats, ¾ cup ground seed powder (or ½ cup vanilla protein powder), ⅓ cup pumpkin puree, ⅓ cup almond butter, 2 tablespoons honey or maple syrup, 1 teaspoon pumpkin pie spice, and 3 pinches of salt.
  2. Add mini chocolate chips, if using, and mix until a thick dough forms.
  3. Roll into 1-inch balls.
  4. For Halloween, dab a bit of almond butter onto each candy eye and press on candy eyes — one, two, or none, whatever you’re in the mood for.
  5. Chill in an airtight container for at least 30 minutes before serving.
  6. Store in fridge or freezer.

No-bake pumpkin-spiced protein balls – a candy-free Halloween treat with real staying power. I added some candy eyeballs to make it more festive! Make these any time of year too!

Ingredients
  

  • 1 cup rolled oatmeal
  • 3/4 cup grinded seeds (homemade protein powder)* OR 1/2 cup protein powder
  • 1/3 cup Almond Butter or other nut butter
  • 1/3 cup pumpkin puree
  • 2 tbsp honey or maple syrup; if for kids – add another tbsp, then add more oatmeal ~2 tbsp
  • 1 tsp pumpkin spice or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg and all spice.
  • 2 pinches sea salt or himalayan salt
  • a few candy eyeballs for Halloween
  • 1-2 tbsp mini chocolate chips optional

Instructions
 

  • Combine oats, protein powder, pumpkin puree, almond butter, honey or maple syrup, pumpkin pie spice, and salt in a bowl.
  • Stir in chocolate chips, if using, until a thick dough forms.
  • Roll into 1-inch ball.

  • Store, keep chilled in an airtight container up to a week, freezer for 2-3 months.

Notes

*Homemade Protein powder:
  • equal amounts of sunflower, pumpkin, hemp, flax and chia seeds, and add 1/2  amount of sesame seeds.
  • Grind each then add together and stir in a large bowl with wooden spoon. 
Additional Notes:
  • Store chilled in an airtight container up to a week, or freeze up to 2-3 months.
  • If adding the extra tablespoon of sweetener for kids, add 2 extra tablespoons of rolled oats to balance the added moisture.
