I made this because was interested in how good could cottage cheese bark actually be, its amazing and I have made it since cause its so satisfying. It’s somewhere between a bark and a square, where ice cream meets healthy. This has quickly become my new favorite frozen treat, mostly because it’s built on cottage cheese, and you can stir in protein powder to push the protein even higher if you want to.
If you’re working with a regular blender, blend the cottage cheese first then fold in the rest, this mixture is thick enough that dumping everything in at once isn’t kind to your blender. I skipped my homemade protein seed mix the day I brought this to a friend’s BBQ, but it’s a regular add-in when I’m making it just for myself.
It’s sugar-free, takes about 5 minutes of actual work ā you’ll spend longer digging ingredients out of the cupboard than making it. Use full-fat cottage cheese so it stays thick and less icy; if you’re using non-fat (or your full-fat happens to be watery), stir in ¼ teaspoon of xanthan gum, or arrowroot flour or cornstarch if that’s what you have on hand. Then have fun with toppings ā melted chocolate, nuts, sea salt, granola, chocolate chips, M&Ms, shredded coconut, dried or regular berries, granola, whatever sounds good.
Everyone at the party was skeptical the second I said the name out loud ā cottage cheese bark doesn’t exactly sell itself. But one bite in, they were asking for the recipe. So here it is.

Use full-fat or 2% cottage cheese for the best texture, non-fat tends to freeze icy rather than just solid. If that’s all you have, or your full-fat cottage cheese runs watery, stir in ¼ teaspoon xanthan gum (arrowroot flour or cornstarch work as substitutes) to thicken it up. The almond flour is what keeps this from freezing into a rock-hard block, giving it more of a soft, scoopable bite instead.

Step-by-Step Instructions (with Full Recipe below)
- Blend 2 cups cottage cheese til completely smooth and creamy, 1-2 minutes.
- Fold in 2 tablespoons almond butter, 3 tablespoons almond flour, 2 tablespoons honey or maple syrup, and 1 teaspoon vanilla extract, 2 pinches of salt, and 2 tablespoons protein powder (if using) by hand.
- Line a baking sheet with parchment paper. Pour the mixture on and spread evenly into a rectangle, about ¼-1/3 inch thick. (A parchment-lined bread pan also works well and gives a thicker result of 1 inch – this is what I show here)
- Scatter your toppings evenly over the top: chopped mixed berries, melted dark chocolate chips, chopped nuts or seeds, granola, and a pinch of sea salt, pressing gently so they stick. Freeze until firm. Slice if made in a bread pan, or break into pieces if made as bark. Store in the freezer in an airtight container, it should be soft enough to eat straight from the freezer or it may need a few minutes before eating.

High Protein Cottage Cheese Bark
Ingredients
- 2 cups cottage cheese – full fat if using non-fat or 2% add 1/4 tsp of xanthan gum (arrowroot powder or corn starch)
- 3 tbsp almond flour
- 2 tbsp almond butter
- 1 tsp vanilla extract
- 2 pinches salt
- 2 tbsp protein powder optional
Toppings be creative and have fun, also not necessary.
- 2 tbsp melted dark chocolate chips
- 1 tbsp chopped pecans or nuts/ seeds
- 1 tbsp mixed berries or dried berries & cherries optional
- 2 tbsp granola optional
Instructions
- Blend cottage cheese, almond flour, honey or maple syrup, and vanilla until smooth, 1-2 minutes.
- Fold in almond butter, salt, and protein powder (if using).
- Spread evenly onto a parchment-lined baking sheet or bread pan, ¼-1 inch thick.
- Scatter toppings over the top, pressing gently so they stick.
- Freeze until firm.
- Slice or break into pieces. Store in the freezer in an airtight container.
Notes
- Use full-fat cottage cheese for the best texture; if using non-fat or a watery full-fat, add ¼ tsp xanthan gum (or arrowroot flour/cornstarch).
- Roughly 7-9g protein per serving without protein powder; 9-11g with 2 Tbsp protein powder or homemade seed powder added.
