Mummy Baked Brie Charcuterie Board

A spooky-cute mummy baked brie, wrapped in 2-ingredient dough, crispy outside and gooey inside – the centerpiece of your Halloween charcuterie board.





I’m switching up my usual BOO Board this year into a full charcuterie spread, with a mummy-style baked brie as the centerpiece. I wrapped the brie in strips of my 2-Ingredient Pizza Dough, just about a quarter of a batch, laid over the top like mummy bandages, then baked it until the outside turned crispy and golden and the inside went completely gooey. Two little eyes peeking out from the wrapped dough, and the whole thing becomes the kind of centerpiece people photograph before they even cut into it.

Ingredient Notes
Use about ¼ of a batch of your 2-Ingredient Pizza Dough — enough to cut into thin strips for wrapping, without so much dough that it overwhelms the cheese inside. Any wheel of brie works, though a smaller round wraps more neatly in mummy-strip form than a very large one.

Yogurt-based dough — contributes some protein from the yogurt, along with a bit of calcium.
Step-by-Step Instructions (with Full Recipe below)
- Preheat the oven to 375°F (190C)
- Roll out about ¼ of your pizza dough and cut a circle about 1-2 inches larger in diameter than your brie wheel. This will be the base and sides.
- Place the brie on top of the dough circle, centered. Then poke the dough with fork several times (like 8), so it doesn’t puff.
- Cut thin strips (½ inch) from the remaining dough and wrap them around the sides and over the top of the brie, mummy-bandage style, pressing the ends gently into the base circle so they seal together.
- Leaving a small gap near the top for two “eyes.”
- Press two small pieces of olive, peppercorn, or dried fruit into the gap for the eyes.
- Transfer to a parchment-lined baking sheet or better a casserole dish that fits it perfect and can be used on the charcuterie board.
- Bake 20-25 minutes, until the dough is golden and crispy on the outside. Check around the 18-20 minute mark, and tent loosely with foil if it’s browning too quickly before the dough looks fully cooked through.
- Let rest 5 minutes before transferring to your charcuterie board – the inside will be very hot and gooey right out of the oven.

Mummy Baked Brie Charcuterie Board
Ingredients
- 1 wheel brie
- 1/4 batch 2-Ingrdient Pizza Dough
- 2 green or black olives
- dried fruit for eye if green olive
Crackers, olives, meat, chocolate, etc! to make the rest of the Charcuterie board
Instructions
- Preheat oven to 375oF (190C).
- Roll out a portion of your dough and cut a circle about 1-2 inches larger in diameter than your brie wheel.
- Place the brie on top of the dough circle, centered.
- Poke several holes across the circle with a fork.
- Cut thin strips (½ inch) from the remaining dough and wrap them around the sides and over the top of the brie, mummy-bandage style, pressing the ends gently into the base circle so they seal together.
- Leave a small gap for the “eyes.”
- Bake at 375°F (190C) for 20-25 minutes, same as before, checking at 18-20 minutes.
How to create a Mummy Baked Brie Charcuterie Board
- Place your anchors first. Set the mummy brie slightly off-center (not dead-center, use asymmetry looks more natural and styled). If you have a small bowl for olives or dip, place that as your second anchor point, roughly opposite the brie.
- Add height and color – such as small pumpkin or cool gourd for seasonal flair, or use scatter pomegranate seeds or dried cranberries for color pops! Fresh herbs is a nice addition too. Have fun.
- Fan out crackers, scatter meat and cheese. You can create folded or rolled slices of meat.
- Leave some space on the board to be seen through. So that it looks like every scatter of meat and cheese looks deliberate
